Weyermann Carared
To summarize Weyermann Carared a drum-roasted caramel malt made from two-row, German barley. Notably a popular choice for brewers because of the rich flavor and color profile. Because Carared obtains a Lovibond rating of 15.5-23.1, which means that it will add a deep red color to your beer. It also obtains a malty-sweet flavor with notes of caramel, honey, and biscuit.
Also used in a wide variety of beer styles, including:
- Amber Lagers: Vienna Lager, Franconian Rotbier
- Bocks: Helles Bock
- Pale Ales: American Pale Ale
- IPAs: Red IPA, Double IPA
- Amber Ales: Ordinary Bitter, Scottish Light, Irish Red Ale, American Red Ale, English Pale Mild Ale
- Brown Ales: Dark Mild, London Brown Ale
- Strong Ales: Imperial Red Ale
- Porters: Baltic Porter
- Wheat Beers: Weissbier, Bamberg Weiss Rauchbier, Bernsteinfarbenes Weizen
- Sour Ales: Flanders Red Ale
As well as typically used in smaller amounts, up to 25% of the grain bill. However, also used in larger quantities to create a more intense flavor and color profile.
Here are some tips for using Weyermann Carared in your brewing:
- Firstly, mash Carared at a slightly higher temperature than your other malts to avoid astringency.
- Secondly, carared can be steeped or mashed. If you are steeping, steep it for 30-60 minutes at 150°F.
- Thirdly, Carared can be fermented with a variety of yeast strains, but it is typically used with ale yeasts.
- Lastly, be careful not to over-hop your beer if you are using Carared, as the malt can be quite sweet.
