Airlock
To summarize, airlocks are not typically used in the distillation process itself. However, they are useful in the fermentation stage. An airlock, a device that allows gases to escape from a fermentation vessel. Not allowing outside air in.
In essence during fermentation, yeast converts sugars into alcohol. Carbon dioxide gas produced as a byproduct. An airlock allows the carbon dioxide to escape without exposing the fermenting liquid to oxygen, leading to off-flavors or spoilage.
Once complete and the liquid ready for distillation, the airlock typically removed and the vessel is sealed for process. Notably airlocks are not designed to handle the high temperatures and pressures involved in distillation. Instead, a still or column is used to separate the alcohol from the other components.
While airlocks are useful tools for fermentation, they are not needed for the distillation process itself.

How to use an airlock when fermenting
An airlock, a simple and effective way to allow gases to escape while preventing oxygen and other contaminants from entering your fermenting vessel.
Here’s how to use an airlock when fermenting:
1. Firstly, make sure your fermenting vessel has a hole or grommet specifically designed for an airlock. Usually found in the lid or top of the vessel.
2. Secondly, fill the airlock halfway with water or a sanitizing solution. This creates a barrier that allows gases to escape while preventing outside air from entering.
3. Thirdly, insert the airlock into the hole in the fermenting vessel lid. Make sure it fits snugly to create a tight seal.
4. As your fermentation progresses, you’ll notice bubbles forming in the airlock. This is a sign that gases are being released from the fermenting process.
5. Lastly, check the airlock regularly to make sure it is still filled with water or sanitizer. Refill as needed to maintain the seal.
